Milk and Cookies Cupcakes



Enjoy the tasty mix of soft white cupcakes stuffed with chocolate chip cookies and topped with cookie dough frosting. If you like cookies, these cupcakes are a great treat!

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk
  • 1/2 cup crushed chocolate chip cookies
  • 1/4 cup mini chocolate chips for batter
  • 1/4 cup mini chocolate chips for garnish

Instructions:

Preheat your oven to 350F 175C and line a cupcake pan with cupcake liners

In a mixing bowl, whisk together the flour, baking powder, and salt

In another bowl, cream the softened butter and sugar until light and fluffy

Beat in the eggs, one at a time, followed by the vanilla extract

Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry mixture

Mix until just combined

Fold in the crushed chocolate chip cookies and 1/4 cup of mini chocolate chips into the cupcake batter

Divide the batter evenly among the cupcake liners, filling each about 2/3 full

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean

Allow the cupcakes to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely

For the frosting, prepare a batch of your favorite cookie dough eggless

Once the cupcakes are completely cooled, pipe or spread the cookie dough frosting on top of each cupcake

Sprinkle the remaining 1/4 cup of mini chocolate chips on top for garnish
