Ingredients:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 teaspoons pure vanilla extract
- 1 cup hot water
- 1/2 cup caramel sauce
- 1/2 cup chocolate chips
- 1/2 cup chopped pecans
- 100 small caramel candies for filling
Instructions:
Warm up the oven to 350F 175C and put cupcake liners in a pan
Mix the cocoa powder, baking powder, baking soda, and salt with a whisk in a large bowl
In a separate bowl, mix the eggs, buttermilk, oil, and vanilla extract
Mix everything together well
After adding the hot water, mix the batter some more until it is smooth
The batter should be about two thirds of the way up each cupcake liner
Each cupcake should have a small caramel candy in the middle
Press the candy down a bit
After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
After taking the cupcakes out of the oven, let them cool in the pan for a few minutes
Then, move them to a wire rack to finish cooling
Spread caramel sauce on top of each cupcake once they are completely cool
Put chopped pecans and chocolate chips on top of the caramel sauce
For an extra treat, add one more drizzle of caramel sauce at the end
