Ingredients:
- 1 cup butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup mini chocolate chips
- 1/2 cup finely chopped fresh mint leaves
- 1 cup powdered sugar
- 1-2 tablespoons milk
- 1/4 teaspoon peppermint extract
Instructions:
Make the butter and sugar fluffy by beating them together in a large bowl
Add the egg and vanilla extract and mix them in well
Mix the cocoa powder, salt, baking powder, and baking soda with a whisk in a different bowl
Slowly add the dry ingredients to the wet ones and mix them together until they are just combined
Add the small chocolate chips and chopped mint leaves and mix well
Make a disc out of each half of the dough
Cover with plastic wrap and put in the fridge for at least an hour
Warm the oven up to 350F 175C and put parchment paper on baking sheets
On a floured surface, roll out the chilled dough until it is about 1/4 inch thick
Use round cookie cutters to make cookies
As soon as the baking sheets are ready, put the cookies on them
Bake for 8 to 10 minutes, or until the edges are set
After baking, let the cookies cool for a few minutes on the baking sheets
Then, move them to a wire rack to cool completely
To make the mint filling, mix the powdered sugar, milk, and peppermint extract in a small bowl with a whisk
Make any necessary changes to the milk to get the consistency you want
On the bottom of a cookie that has been cooled, spread a teaspoon of the mint filling
Then, put another cookie between them
Do it again with the rest of the cookies and mint filling
Wait until the mint filling is set before you serve it
