A creamy and flavorful curry with the perfect hint of pumpkin spice.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup pumpkin puree
- 1 can coconut milk
- 2 tablespoons curry powder
- 1 teaspoon ground ginger
- 1 teaspoon ground cumin
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
Place chicken breasts in the slow cooker
Add diced onion and minced garlic
In a bowl, mix together pumpkin puree, coconut milk, curry powder, ginger, cumin, cinnamon, salt, and pepper
Pour the mixture over the chicken
Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through and flavors are well combined
Serve over rice and garnish with fresh cilantro
