Surinamese Egg Salad Burger



These Surinamese Egg Salad Burgers are a tasty take on the traditional burger. They are filled with a creamy and spicy egg salad, crisp lettuce, juicy tomatoes, and zesty red onions. The bacon and cheese that you can add are optional, but they make this burger even more delicious.

Ingredients:

  • 4 burger buns
  • 4 large eggs
  • 1/2 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1 cup shredded lettuce
  • 1/2 cup sliced tomatoes
  • 1/4 cup thinly sliced red onions
  • 4 slices of cooked bacon optional
  • 4 slices of cheese optional

Instructions:

Boil the eggs: Place the eggs in a saucepan and cover them with water

Bring to a boil, then reduce the heat and simmer for 9-12 minutes

Once done, remove from heat and place them in cold water to cool

Peel and slice the eggs

Prepare the egg salad: In a bowl, combine mayonnaise, yellow mustard, curry powder, ground cumin, cayenne pepper, salt, and pepper

Mix well

Add the sliced eggs and gently fold them into the mayo mixture

Cook the bacon optional: In a separate pan, cook the bacon slices until crispy

Drain on paper towels

Assemble the burgers: Toast the burger buns

On the bottom half of each bun, place a generous portion of the egg salad

Top with shredded lettuce, sliced tomatoes, red onions, bacon if using, and cheese if using

Close the burgers with the top half of the buns

Serve immediately and enjoy your Surinamese Egg Salad Burgers!
